Avocado & Broccoli Soup

Made this soup yesterday for lunch and it was the bomb!! Perfect if you want something lighter but still something that’s satisfying. I’m doing a 3 week cleanse right now where I’m only eating plant based foods. So no animal products during this time, which actually feels amazing. I believe that it’s good to change up your diet routines now and then. Try new things. Learn more about what works for YOU and YOUR body. We are all different. I’m definitely feeling more energetic after only 1 week of going plant based and I’m not tired during the day which I’ve been almost all year. Like crazy tired already at 1 PM so I think this can be a good thing to do! Who knows maybe I’m cutting out animal products for good. I feel like eggs are almost the hardest to be without when following a plant based diet, since eggs are soooo convenient!! Like if you want something fast for breakfast I’m always frying some eggs or making an omelette, but a chia pudding on the other hand takes zero time to prepare in the morning if you have kept it in the fridge over night. It’s all about changing and learing new things. To grow.

Avocado Broccoli Soup

Serves: 2
Ingredients
  • 3 small avocados
  • 1 big broccoli head
  • 4 handfuls of spinach
  • 1 cup chopped green zucchini
  • 1 big garlic clove, minced
  • 1 tbsp extra virgin olive oil
  • Salt & Pepper after taste
  • Hot water
Topping
  • Red bell pepper
  • Fresh basil
  • pepper
Instructions
  1. Place all of the ingredients in a blender.
  2. Add as much hot water as you want/need, start with a little and add more if you want.
  3. Mix until everything is well blended.
  4. Garnish with red bell pepper, basil and pepper.
