Gooey Hazelnut Chocolate Chip Cookies

Oh my godness you absolutely have to try these!! They are super simple to make and if you don’t have any hazelnut flour on hand, buy it!!! Lol, no but you can just go with almond flour instead – they will taste just as good! Even though the hazelnut flour gives them a really special nutty flavor which I LOVE. I think it’s fun to switch it up and use some ingredients that you normally don’t use as often like hazelnut flour. I don’t know about you but I normally use almond flour and coconut flour when I bake so it’s definitely fun to go a little crazy haha.  I made them yesterday but I failed big time and burned all of them while I was blogging about them lol, so I had to go to the grocery store and buy some more almond flour since mine (of course) had run out – but so worth it!!! These cookies are all vegan, paleo, plant based, gluten free and guilt free. So awesome right?!

Gooey Hazelnut Chocolate Chip Cookies

Serves: 9-10
Ingredients
  • 1 cup almond flour
  • 1 cup hazelnut flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla powder or vanilla extract
  • A pinch of Himalayan pink salt
  • ½ cup raw honey
  • ¼ cup coconut oil, melted
  • ½ cup chopped 70% dark chocolate
Instructions
  1. Preheat oven to 350 F or 175 C.
  2. Combine almond flour, hazelnut flour, baking powder, salt and vanilla powder in a big bowl.
  3. Add the melted coconut oil, honey and vanilla extract (if you're not going with vanilla powder).
  4. In the end add the chocolate.
  5. Shape about 9 small balls and place them on a parchment lined baking sheet.
  6. Use the palm of your hand to gently press the balls down a bit so they look more like cookies.
  7. Decorate with some more chocolate chunks.
  8. Let bake for about 8-10 min.
  9. Let cool on a cooling rack.

OMG sååå sjukt goda blev dessa alltså!!! De blev sådär härligt sega och lagom söta. Inte för söta och inte för (osöta?!) Perfekta till kaffet eller teet helt enkelt! De påminner lite om sådana där sega kola kakor som man bakade när man var liten, (förutom att dessa har choklad också) dem kakorna var verkligen mina favvisar tillsammans med chokladsnittar med pärlsocker på. Hur gott??? Oh geeez varför jag om sånt?! Blir så sjukt sugen haha. Stop it!! Men dessa kakor kan man iaf äta med hyffsat gott samvete iaf! YUM.

Sega Hasselnöts Choklad Kakor

Serves: 10
Ingredients
  • 2.5 dl mandelmjöl
  • 2.5 dl hasselnöts mjöl
  • 1 tesked bakpulver
  • 1 tesked äkta vanilj pulver
  • En nypa Himalayan pink salt
  • 0.8 dl kokosolja, smält
  • 0.8 dl raw rinnande honung
  • 1.2 dl hackad 70% mörk choklad
Instructions
  1. Sätt ugnen på 175 grader.
  2. Blanda alla torra ingredienser förutom chocolate chipsen i en stor skål.
  3. Tillsätt kokosoljan och honungen. Rör runt.
  4. Häll i chokladen och blanda igen.
  5. Forma 10 små bollar och lägg dem på en bakplåtsklädd bakplåt.
  6. Platta till bollarna lite med handen och dekorera med lite mer choklad bitar.
  7. Låt baka ca 8-10 min och låt kakorna svalna/stelna till på ett galler.
