Gooey & Chewy Vegan Gingerbread Cookies (oil-free)

O.M.G best recipe colaboration ever. I used PaleOMG’s ”Soft & Chewy Double Chocolate Cookie recipe” (LOOOVE those cookies, you have to try them) and instead of chocolate chips and cacao powder I used Gingerbread spices!! The result? One of the yummiest things I’ve ever baked!! Really intersting taste I must say. You can really feel the Christmas spirit when you’re eating these cookies!!! And the best part is that the more you eat of them the yummier they become haha. Not so sure if that’s a good thing though…. And I must also say that the texture of them are like sooo perfect and just as PaleOMG’s original recipe they are super chewy and really soft and gooey. Mine are a bit thinner though. They taste like gingerbread cookie dough but with a bit more texture! Plus that they won’t give you a stomach ache (depends on how many you eat though). So if you’re looking for Christmas Cookies to make this year look no further. Or you can look for more recipes but you just HAVE to make these!!! 🙂

We made Spicy chicken tortillas and it was sooo good, then we ate these cookies! Johanna’s boyfriend Zimmy loved them and he is not a guy who likes sweets normally. He’s more into beer and meat haha. Gooey & Chewy Gingerbread Cookies

Ingredients
  • 1 cup thick almond butter (if it's too oily the cookies will not stay together), add almond flour if it's too smooth. (2.4 dl)
  • ⅔ cup coconut sugar (1.6 dl)
  • 1 whisked organic pastured egg or vegan egg substitute
  • ½ teaspoon ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon cardamom
  • ¼ teaspoon cloves
  • ¼ teaspoon bitter orange
  • 1 teaspoon baking soda
  • A pinch of himalayan pink salt
  • 2 teaspoons organic molasses, unsulphured
Toppings
  • Enjoy Life semi sweet Chocolate Chips
  • Silvered Almonds
Instructions
  1. Preheat oven to 350 F (175 C).
  2. In a food processor combine almond butter, whisked egg, molasses and coconut sugar until well mixed.
  3. Combine all dry ingredients in a small bowl and add them into the food processor.
  4. Mix until well combined.
  5. Since I used molasses the dough is reaaaally sticky so I used a spoon to scoop out the dough into small piles that you place on a parchment lined baking sheet.
  6. Garnish each pile/cookie with some chocolate chips or silvered almonds.
  7. I got 10 cookies.
  8. Let them bake for 8-10 min. Depending on your oven. I had them in for 8 min.
  9. They are really gooey so let them cool on the baking sheet for about 30 min before you move them to the cooling rack (use a big turner).
  10. Let them cool and EAT.
  11. So yummy.

Gjorde dessa kakor till mig, Johanna och hennes pojkvän Zimmy igår kväll efter vi gjort mexican chicken tacos ihop. Jag tog paleomg’s recept på Soft&Chewy Double Chocolate Cookies men gjorde om det lite, istället för kakao så tog jag pepparkakskryddor eftersom det snart är Jul och tänkte att det vore en kul liten twist på det hela! Woop Woop! Visste inte alls hur det skulle bli men det blev faktiskt sjukt gott!!! Zimmy gillade tom dem och han brukar hata allt sött typ så det var bra betyg tyckte jag haha. Eller så sa han bara det för att vara snäll. Oklart.

Ingredients
  • 2.5 dl mandelsmör
  • 1.5 dl kokossocker
  • 1 vispat ekologiskt ägg eller vego ägg substitut
  • ½ tsk malen ingefära
  • ½ tsk kanel
  • ¼ tsk malen kardemumma
  • ¼ tsk kryddnejlika
  • ¼ tsk malen pomeranskrydda
  • 1 tsk bikarbonat
  • En nypa Himalaya salt
  • 2 tsk osvavlad melass sirap
Topping
  • Enjoy Life Chocolate Chips
  • Mandelflarn
Instructions
  1. Sätt ugnen på 175 grader.
  2. Mixa mandelsmör, vispat ägg, molass och kokossocker tills väl blandat i en matberedare.
  3. Kombinera alla torra ingredienser i bunke och häll i dem i matberedaren.
  4. Mixa igen.
  5. När man använder molass sirap så kommer smeten bli väldigt kletig så man få helt enkelt klicka ut smeten i högar på ett bakplåtspapper, det går med andra ord inte att rulla degen till små bollar.
  6. Jag fick 10 små högar.
  7. Strö över lite chocolate chips/mandelflarn på varje hög.
  8. Låt dem baka i ca 8-10 min beroende på vilken ugn du har. Jag hade inne dem 8 minuter.
  9. Dem är riktigt sega så låt dem kallna helt på ett galler, minst 30 min innan du rör dem. (För över kakorna med hjälp av en stor stekspade från plåten till gallret).
