Happy Monday everyone! I made this Acai Bowl for brekky yesterday and it was absolutely divine. On top I had some rawnola from Loni Jane (just mix dates with shredded coconut, you can have rolled oats too but my stomach doesn’t like raw oats ATM so I just skipped it), some frozen raspberries and blackberries, coconut flakes and banana. Soon good!! I wanted to add dried mulberries too but I couldn’t find any (sooo sad because dried mulberries are LIFE!!!

I made another smoothie bowl today for brekky as well but without the acai and it was just as good, what’s your fave smoothie bowl recipes? I loveeee to make smoothie bowls and nana ice creams during the summer here in Sweden cause it basically the only time you can eat them without getting a brain freeze haha. But even during the summer the chances of getting a brain freeze while eating a nana nice cream is quite big because hello cold rainy Swedish summer! No let’s be positive here hehe. The weather has been amazing these past days and I think it will be around 20 degrees and sun the rest of the week too (cross some fingers please)!!

Here comes the recipe (for 1 person):

  • 4 frozen bananas chunks
  • 1/2 frozen acai package
  • 3/4 cup raspberries (2 dl ca)
  • 1 – 1  1/3 cup almond milk ( 2.5-3 dl ca)
  • 1/2 tsp real vanilla powder
  • 1 tbsp maple syrup

Mix the frozen banana chunks with the acai, frozen raspberries and almond milk into a nice creamy texture. Add as much almond milk as you fancy, just don’t everything at the same time. Then add the vanilla and maple syrup.
