Världens godaste Tomat & Linssoppa

Omgaaad gjorde typ världens godaste tomat och linssoppa till middag idag!! Skämtar inte haha. Det roliga är att den tar typ bara 25 min att göra också och är asnyttig, så kom inte och säg att nyttig god mat tar lång tid att göra eller äcklig. ;) NO excuses!! 

Här kommer receptet:

  • 1/2 lök
  • 2 vitlöksklyftor, hackade
  • 2 portabello svampar
  • Vatten
  • 1 burk körsbärs kross a 400 gram (typ som tomatkross fast med körsbärstomater)
  • 1/2 dl röda linser
  • Typ 3 dl vatten
  • 1/4 tsk torkad oregano
  • Örtsalt (valfritt)
  • Färsk bladpersilja

 

Gör så här: 

Bryn lök och vitlök i lite vatten tills gyllenbrunt på medelhög värme i en kastrull. Häv i svampen och låt bryna lite till utan att det bränns. Tillsätt lite vatten åt gången, ca 1 matsked.

Häll på körsbärstomt burken, linser och vatten. Samt alla kryddor och låt koka på medellåg värme under lock i ca 15 min eller tills det är klart.

Servera med färsk persilja.

 

Avocado & Broccoli Soppa

Gjorde den här soppan till lunch för mig och min mamma idag och den var bara så sjukt god! Inspirerades av Rachel Bråthen’s bok ”Yoga Girl” där det fanns ett liknande recept, ändrade bara lite grann så all kredd till Rachel för denna soppan! Sjukt god och perfekt ifall du vill ha något lättare men ändå mättar så där lagom. Jag kör ju en liten plant baserad detox nu under 3 veckor är det tänkt, får väl se hur det går haha, men jag skall göra mitt bästa! Vill göra detta för jag känner mig lite tung i kroppen och vill bara låta kroppen vila från alla animaliska produkter under en period. Tror det är kan vara bra att variera sin kost ibland! Plus att man får massa ny inspiration, för tro mig man måste vara gaaanska kreativ om man vill komma på olika rätter när man ska bara äta grönsaker, frukt och nötter hela dagarna! Nu har jag kört i en vecka och jag känner mig super pigg och inte alls lika trött som jag har gjort under tid nu. Under hela våren har jag typ känt mig trött redan kl 13 på dagen utan någon speciell anledning så jag tror min kropp behövde en nystart!

Avokado & Broccoli Soppa

Ingredients
  • 3 små avokado
  • 1 stort broccoli huvud
  • 4 nävar baby spenat
  • 2.5 dl hackad zucchini
  • 1 stor vitlöksklyfta, pressad
  • Örtsalt och peppar efter smak
  • Hett vatten
  • Paprika och färsk basilika för topping
Instructions
  1. Mixa allt i en blender (sån man gör smoothies i) ihop med hett vatten, börja med att hälla på lite i taget tills du får den konsistensen du vill ha!
  2. Smaka av och servera i två skålar. Toppa med hackad paprika och färsk basilika. Räcker för två personer.

I’m doing a 3 week cleanse right now where I’m only eating plant based foods. So no animal products during this time, which actually feels quite good. I believe that it’s good to change up your diet routines now and then. Try new things. Learn more about what works for YOU and YOUR body. We are all different. I’m definitely feeling more energetic after only 1 week of going plant based and I’m not tired during the day which I’ve been almost all year. Like crazy tired already at 1 PM so I think this can be a good thing to do! Who knows maybe I’m cutting out animal products for good haha. But I think I like grilled fish and bacon too much for doing that lol. But maybe I’ll cut down on it and eat more greens than meat. I feel like eggs are almost the hardest to be without when following a plant based diet, since eggs are soooo convenient!! Like if you want something fast for breakfast I’m always frying some eggs or making an omelette, but a chia pudding on the other hand takes zero time to prepare in the morning if you have kept it in the fridge over night. It’s all about changing and learing new things. To grow. //

Avocado Broccoli Soup

Ingredients
  • 3 small avocados
  • 1 big broccoli head
  • 4 handfuls of spinach
  • 1 cup chopped green zucchini
  • 1 big garlic clove, minced
  • Salt & Pepper after taste
  • Hot water
Topping
  • Red bell pepper
  • Fresh basil
  • pepper
Instructions
  1. Place all of the ingredients in a blender.
  2. Add as much hot water as you want/need, start with a little and add more if you want.
  3. Mix until everything is well blended.
  4. Garnish with red bell pepper, basil and pepper.

 

Creamy Coconut Cauliflower Soup

OMG! This is like the yummiest soup ever. The flavor is just to die for. I’m so happy with the end results of this soup that I made yesterday for lunch for me and my mom! It does only have like three main ingredients too so it goes superfast to make, how awesome isn’t that huh??? Plus that it’s healthy and clean! I think I’m gonna be making this soup many times this fall since it’s super warming to eat soups when it’s chilly outside!!

If you are following me on Instagram you have maybe noticed that I’ve started to eat a more plant based diet lately? By plant based I mean an organic, gluten free, lactose free, vegan diet. Which means heaps of green leaves, veggies fruits, nuts and seeds. So it’s basically a high raw vegan diet with some cooked meals here and there. This is exactly how I used to eat three years ago so it’s not completely new to me! You who read my blog back then know this. But what’s different this time is that I’m not eating like this 100% of the time like I did then, since I love me some wild caught fish every other day and I allow myself to eat wild or grass fed meat once a week if I want. Just so I make sure that I get my Vitamin B12. Since that is the only vitamin you can only get from an animal source. I can also eat eggs a few times per week without getting bloated, but only the egg whites. If I eat the yolks I bloat up like crazy. SO weird!!! And I hate to throw away the yolks since all the good stuff is in them. But I rather have a non bloated tummy then eat the yolks and look like I’m fat. The reason WHY I do this is because I feel better when I eat this way, I’m feeling more alive and I’m not bloated at all like I’ve been during the whole time when I’ve been eating meat and eggs. This is what works for ME and it does not certainly means that it works for you.

Creamy Coconut Cauliflower Soup

Serves: 2
Ingredients
  • 2 tablespoons water
  • 6 spring onions
  • 1 big cauliflower head
  • 2½ cup full fat coconut milk (600 ml)
  • ½-1 teaspoon herbal sea salt (I used Herbamare)
  • A handful fresh parsley
Instructions
  1. Heat a big sauce pan on medium heat and cover the bottom of the pan in water.
  2. Chop the spring onions and throw them in the pan. Let them sauté in the pan for a few minutes.
  3. Chop the cauliflower into smaller pieces and add them to the pan.
  4. Pour over the coconut milk and add the salt
  5. Place a lid over the sauce pan and let it cook until the cauliflower is soft. Takes about 20 min.
  6. Stir now and then and make sure that the heat isn' t too high.
  7. Season after taste.
  8. Add the parsley before serving.
